Turkish Artichoke Salad

The perfect summer salad. Super nutritious, supper yummy, and super easy to make. Who could ask for anything better?


  • 8 Artichoke hearts (you can buy these ready in a jar)

  • 1 carrot

  • 1 onion

  • 3tbsp Olive oil + extra

  • Small bunch of dill

  • 1 lemon

  • Salt & Pepper to taste



Preparation Time: 15 mins

Cook time: 5 mins

  1.  Heat oil in a pan.

  2. Place chopped onions and carrots into the pan and cook until softened

  3. Add salt and pepper to taste.

  4. Remove artichokes from jar and add a sprinkle of olive oil

  5. Top with the carrots and onions.

  6. Squeeze lemon over it all.

  7. Chop the dill and sprinkle.
