Italian Tomato Salad

This honestly is such a fresh, delicious and healthy summer salad. The crunch and sweetness of the tomatoes, along with the zesty tang of the balsamic vinegar contrast so well. You can leave the onions out if you have a fancy date, if not get those onions in- a super antioxidant.

INGREDIENTS

  • A large punnet of mixed cherry tomatoes.

  • Half a red onion

  • 10 basil leaves (or more )

  • 1 tbsp watercress 

  • Sea salt

  • 2 tbsp olive oil

  • 1 tbsp balsamic Vinegar

METHOD

  1. Chop cherry tomatoes in half.

  2. Slice the red onion.

  3. Mix the tomatoes and onions together.

  4. Add the basil leaves, water cress, salt, oil and balsamic vinegar, and serve.

  5. You could serve with some toasted sourdough, as a side to any main, or as a fresh summer starter.
