Chocolate Truffles

I super duper love these. Not only because they are so easy to make, but because they really do taste like chocolate. I love having a box of these in the fridge & quite easily popping one into my mouth when I get sweet cravings. They work so well with a cup of tea too; sitting down, dunking them into my tea and watching them melt. Oh gosh they are so yummy!

  • 2 cups of pitted high quality soft dates

  • 2-3 tablespoons raw cacao & additional for coating

  • Optional ingredients: 1 tablespoon coconut oil, 1 teaspoon vanilla essence, sea salt to taste, carob powder

  1. Blend soft dates and cacao powder in a high speed blender or food processor until you have a smooth consistency. Scrape the dough down until it's well combined. Add any extra ingredients you may like.

  2. Scoop out mixture, roll into small balls and place on to baking paper. Lightly coat hands with cacao powder to make it easier.

  3. Roll balls into cacao/carob powder or coconut.

  4. Place truffles in the refrigerator for at least one hour to firm up.
