Peruvian Salsa

I don't believe there could be an easier or yummier salad and with only one main ingredient; that is it. It is fresh, tasty, and has a slight lemony tang. A great side to any main or as a wonderful starter next to some baked crisps or vegetable crudités.


  • 2 avocados

  • 1/2 handful parsley

  • 1 lemon

  • 1 tbsp olive oil

  • Pinch salt

  • Pinch black pepper


  1. Chop both avocados into small chunks.

  2. Roughly chop the parsley and add to avocado.

  3. Add the lemon, olive oil, salt and pepper, and stir together.

  4. Serve in a pretty bowl and garnish with some coriander or parsley.
