Chickpea Burgers

These burgers are so easy to make, and are a wonderful healthy alternative. You can serve them in any bun of your choice, between some lettuce, or in a cabbage leaf with some veggie sides. The avocado salsa or Italian tomato salad is a wonderful accompaniment or alternatively check out the veggie chips.

INGREDIENTS

  • 400g can drained chickpeas

  • 3 heaped tbsp Buckwheat flour

  • 1/2 tsp garlic

  • 1tsp ground cumin

  • 1 tsp paprika

  • Small bunch coriander

  • 1 medium chopped red onion

  • 1tbsp olive oil

METHOD

  1. Drain the chickpeas, add the onions and and pulse through the food processor. Make sure you keep some texture.

  2. Add the flour, garlic, cumin, paprika, coriander and onion. Blend again, ensuring you keep some texture.

  3. Make into patties  (if you have time you can place them in the fridge for 30 minutes to firm up).

  4. Heat the oil in the pan and add the burgers.

  5. Fry on each side for 5 minutes on a medium heat.

  6. Serve in a bun, with sliced tomatoes and onions or between two large lettuce leaves.

Serves:2 big or 4 smaller patties
